Quinoa White Bean Chili
Serves 4-5
2 cups cooked garbanzo beans (~1can)
2 cups cooked cannellini or navy beans (~1 can)
½ cup uncooked quinoa
½ onion chopped
1 bell pepper chopped
1 jalapeno chopped, minced, seeds removed for milder chili
2 garlic cloves, minced
3 cups water
1 packet simply organic brand vegetarian chili
Salt to taste
Add quinoa to large pot plus 1 cup water, bring to boil. Reduce to simmer, add all veggies and cook with lid on until water has evaporated and quinoa is fluffy. Add in 1 1/2c water and beans, bring to simmer. Mix spice packet with ½ cup water until well combined, add to pot, and simmer until chili is desired thickness. Add salt or not, to taste. Top with avocado, scallions, tomatoes, you choose! Enjoy!
