Easy Easy Granola

My friend Linley gave me this recipe, it’s quick, delicious, and nutritious. You can experiment with different nuts, seeds, and fruits. I like to make a basic almond milk in the vitamix and eat it like cereal, without all the added preservatives and stabilizers. The one trick is to make sure you stir it well every 7 minutes, because the granola near the edges of the pan cooks quicker. 

I love trader joe’s coconut oil. And this cinnamon from banyan botanicals is phenomenal. I never realized how much cinnamon quality mattered until having this one.

Easy granola

5 cups old fashioned organic oats
½ cup sliced almonds
½ cup raw sunflower seeds
2/3 cup raw walnuts, chopped
3t cinnamon
1/8t sea salt
1/3 cup maple syrup
1/3 cup coconut oil, melted

Additions when serving (get creative!): unsweetened soy milk, coconut yogurt, berries, raisins, apple, ground flax, banana, dates.
Preheat oven to 350 degrees. Combine all ingredients besides maple syrup and coconut oil and mix well. Drizzle maple syrup and stir until well coated. Drizzle coconut oil and mix until well combined. Transfer to baking sheet and bake for 28-35 minutes. Stir well every 7 minutes, making sure it bakes evenly. Top with whatever you like and enjoy! Serves 8-10.
